The beautiful orange colour of pumpkins is an indicator of high levels of beta-carotene that act as anti-oxidants, helping to fight free radicals in the body which otherwise can lead to wrinkles and skin damage. To top it all off, a cup of cooked, mashed pumpkin contains more than 200% of your recommended daily intake of Vitamin A which aids vision, particularly in dim light.
